Healthy Banana Oat Cake
Ingredients required:-
- 1 cup rolled or plain oats flour
- 2 ripe & smashed bananas
- 2 eggs
- 1/4 cup almond milk or regular milk as per own preference
- 1/4 cup honey or jaggery powder
- 1 tsp vanilla extract
- 1 tsp baking powder
- 1/2 tsp cinnamon for flavour
- 1/4 cup chopped walnuts or almonds (optional)
- Fresh berries for decoration (optional)
Instructions:
- Preheat the oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.
- Blend the oats in a food processor or blender until it forms a fine flour.
- Mash the bananas in a bowl. Add the eggs, almond milk, honey, and vanilla extract, and whisk until combined.
- Add the oat flour, baking powder, and cinnamon (if using) into the wet mixture. Stir until smooth. Optionally, fold in chopped walnuts or almonds for extra texture.
- Pour the batter into the prepared cake pan and spread it evenly.
- Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
