Healthy Banana Oat Cake

Ingredients required:-

  • 1 cup rolled or plain oats flour 
  • 2 ripe & smashed bananas
  • 2 eggs
  • 1/4 cup almond milk or regular milk as per own preference
  • 1/4 cup honey or jaggery powder 
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp cinnamon for flavour 
  • 1/4 cup chopped walnuts or almonds (optional)
  • Fresh berries for decoration (optional)

Instructions:

  1. Preheat the oven to 350°F (175°C) and grease a cake pan or line it with parchment paper.
  2. Blend the oats in a food processor or blender until it forms a fine flour.
  3. Mash the bananas in a bowl. Add the eggs, almond milk, honey, and vanilla extract, and whisk until combined.
  4. Add the oat flour, baking powder, and cinnamon (if using) into the wet mixture. Stir until smooth. Optionally, fold in chopped walnuts or almonds for extra texture.
  5. Pour the batter into the prepared cake pan and spread it evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted comes out clean.
  7. Let it cool before removing from the pan. Top with fresh berries and a drizzle of honey for extra flavor.

This cake is naturally sweetened and packed with fiber and healthy fats. It’s a great option for breakfast or a snack!
